Material:

Broth:

Rice:
  • 1 tablespoon vegetable oil
  • 1 clove of garlic
  • 2 shallots
  • 350 g Thai rice, wash, drain until dry
  • 1 sheet of pandan leaves
  • 1 stick of lemongrass, bruised
  • 1/2 cm of ginger, bruised
  • enough water


How to make:

Broth:
  • Bring enough water to a large pan.
  • Add chicken bones, simmer for 15 minutes until all the foam and dirt come out. Turn off the heat.
  • Lift the chicken bones and dispose of the boiling water.
  • Boil clean water in a pan to taste.
  • Wash chicken bones clean of grease and dirt.
  • Add to boiling water, add leeks, onions, and salt.
  • Cook for 1 hour. Lift, chill and strain.

Steamed Chicken:
  • Wash the chicken thoroughly.
  • Boil the water with garlic, ginger and salt.
  • Add chicken (with chicken breast facing down).

  • Cook for 30 minutes, at half time cooking, turn chicken over.
  • Drain chicken, chicken broth can be used to make rice.
  • Put the chicken in ice water for 5 minutes so that the cooking process stops.

Rice:
  • Saute garlic and shallots until fragrant.
